Ingredients


1. The Baker French Butter Artisan Brioche 4 slices

2. Truffle and mushroom gouda cheese (sliced) 150 g.

3. Truffle and mushroom gouda cheese (shredded) 2 tbsp.

4. Truffle oil ½ tsp.

5. Taleggio cheese (sliced) 100 g.

6. Unsalted butter 50 g.

7. Chopped champignon mushroom ½ cup

8. ½ Chopped onion

9. White wine vinegar 2 tbsp.

10. Thyme 1 tbsp.




Instructions


1. Cook 20 g. of unsalted better with chopped onion in a pan over medium heat. Stir well for about 1 minute or until a lovely fragrance is released.


2. Add chopped champignon mushroom. Stir to mix well with other ingredients for 2 minutes. Then, add thyme and white wine vinegar and continue to stir for another minute or until the ingredients start to get dry. Pour in some truffle oil to enhance the delicious aroma. Remove the mixture from the pan and set aside to let it cool down.


3. Place taleggio cheese slice over a brioche slice. Then, scoop the mushroom mixture and spread over the cheese. Top with gouda cheese slice and put another slice of brioche on top to make a sandwich.


4. Melt the remaining butter in the pan over light to medium heat. Carefully put the sandwich in the pan and toast it for 3 minutes or until golden brown. Remove from the pan and set aside.


5. Sprinkle shredded gouda cheese all over the pan. Then flip the sandwich over the cheese and toast it for 3 minutes or until the cheese is attached to the bread and becomes golden brown. Remove it from the pan and set aside.


6. Diagonally cut the sandwich in half to create triangles. Dish up and garnish with thyme for serving. Now indulge in the mouthwatering truffle cheese toastie.
