Ingredients
1.Pancake flour 1 bag
2.3 Eggs
3.Water 200 cc.
4.Milk 200 cc.
5.Melted unsalted butter 5 tbsp.
6.3-4 Chives
7.Hollandaise sauce 250 g.
8.Ham 4 slices
9.Rocket
10.Vinegar 2 tbsp.
Instructions
1.Start by mixing pancake flour, fresh milk, melted unsalted butter and eggs until well blended. Add chopped chives, stir well and set aside.
2.Put a small knob of butter in a pan over medium-low heat. Pour 2 tablespoons of the pancake mixture into the pan, cook for 2-3 minutes until fragrant, then flip over and cook for another minute. Transfer to a plate and set aside.
3.Bring a large pot of water to a boil. Then add vinegar and stir for a while. Crack an egg into the pot and leave it for 3-4 minutes, then scoop the egg and set aside on a plate.
4.To serve, stack the pancakes with layers of hollandaise sauce, ham and spinach in between. Switch layers as you wish and elaborately top with a poached egg. Scoop more hollandaise sauce over and sprinkle with chives and black pepper on top to savor.
