Ingredients


1. Water chestnut in syrup 1 can

2. Food colorings (blue, green, yellow, orange, and red) 5 cups

3. Tapioca starch 300 g.

4. Syrup ½ cup

5. Coconut milk 500 g.

6. Palm sugar 350 g.

7. Salt ¼ tsp.

8. 2 Pandan leaves

9. Water 1 bottle

10. Ice 1 cup




Instructions


1. Dice water chestnuts in syrup and soak them in 5 food colorings in separate bowls for 20 minutes.


2. Pour tapioca starch into a mixing bowl. Completely drain the colorful water off the water chestnuts and coat with the tapioca starch. Shake off the excess flour.


3. Bring a pot of water to a boil over medium heat. Add the coated water chestnuts into the pot and let them cook until the coating appears clear and float to the water surface. Then, transfer the water chestnuts into cold water instantly. Allow to soak in the cold water for a bit, drain off the water, and set aside separately according to colors.


4. Coat the water chestnuts with syrup to prevent them from sticking together and set aside.


5. To make coconut milk, warm up a pot over low heat. Add coconut milk, palm sugar, salt, and pandan leaves respectively. Stir until well-combined or the palm sugar melts.


6. Scoop every color of water chestnuts into a serving bowl.


7. Top with coconut milk as much as you wish and add ice to make it cold and refreshing for serving.
