Ingredients


1. Cream cheese 16 oz.

2. Cracker 1 box

3. 2 eggs

4. Bakery sugar ¾ cup

5. Salt ½ tsp.

6. Unsalted butter 1 cup

7. Vanilla extract 1 tsp.

8. Superfine sugar 1 tsp.

9. Strawberry 1 box

10. Chocolate 10 oz.




Instructions


First of all, preheat the oven to 180 degrees Celsius.


1. Crush the crackers and combine with bakery sugar, salt and melted unsalted butter in a mixing bowl.


2. Place cupcake liners into the muffin tray. Add the cracker mixture into the liners and lightly press them. Bake for 8 minutes, remove the tray from the oven and lower the temperature to 160 degrees Celsius.


3. To make the cream cheese, mix cream cheese, superfine sugar, salt and vanilla extract until well-combined. Then add egg yolk one by one and whisk until blended and set aside.


4. Add egg whites in another mixing bowl and beat until light and fluffy.


5. Slowly fold the egg whites and add into the cream cheese mixture. Blend well and scoop the mixture on top of the baked crackers in an equal amount.


6. Bake for 20 minutes. Once done, remove the tray from the over and allow it to cool down at room temperature for 20 more minutes.


7. Chill the cheesecakes in the fridge for at least 2 hours. Whilst waiting the cakes to set, melt chocolate using low heat.


8. Once the cheesecakes are properly set, take them out of the fridge and beautifully decorate with the melted chocolate and strawberries for serving your sweetheart.
