Ingredients for Chocolate Pudding
1. Double cream 900 ml.
2. Ground granulated sugar 110 g.
3. Finely ground 70% cacao chocolate 70% 400 g.
4. Vanilla flavor 1 tsp
5. 3 Gelatin sheets
Ingredients for Peanut Topping
1. Coarsely chopped salted peanuts 35 g.
2. Granulated sugar 200 g.
3. Unsalted butter 125 g.
4. Baking soda ½ tsp
5. Rolling boiled water ¼ cup
Ingredients for vanilla coffee syrup
1. Espresso shot or rich black coffee 1 cup
2. Granulated sugar 1 cup
3. Vanilla flavor 1 tsp
Instructions
1. Let’s make chocolate pudding first. Heat the saucepan on the stove, add double cream and ground granulated sugar, stir to blend over low heat. Remove the saucepan from the stove, add finely ground chocolate and set aside for 2 minutes. Place the saucepan on the stove, stir until blended, add vanilla flavor, then turn off the stove.
2. Soak gelatin sheets in iced water for 5 minutes or until tender, drain the water, and put into the saucepan, stir to mix until well-blended and smooth. Filter chocolate pudding batch, pour into the mould and place in the fridge for 1 night until chocolate pudding stays in place.
3. Make peanut topping by heat the saucepan, add granulated sugar, unsalted butter, baking soda, and rolling boiled water. Simmer over medium heat for 10 minutes until well-blended, then turn off the stove.
4. Line a baking tray with foil and oil it up a little, gradually pour the mixture into the baking tray, then sprinkle coarsely chopped salted peanut over the surface. Leave the tray at room temperature for 1 hour or until the mixture becomes sturdy. Gradually slice the solid mixture into small pieces.
5. Make coffee syrup by heat up the saucepan, add espresso or pure black coffee, granulated sugar, rolling boil water, and vanilla flavor. Simmer over medium to high heat until the mixture becomes thickened. Turn off the stove and set aside to let cool.
6. Remove chocolate pudding from the fridge and remove pudding from the mould using a warm knife, transfer to a serving plate. Drizzle coffee syrup over the pudding and sprinkle peanut topping to garnish. Now, you can experience the delightful Italian-style dessert by yourself.
