Poached Pears


Ingredients

1. 8 peeled kids size pears

2. 1 vanilla bean

3. 1 cup of sugar

4. ¼ cup of maple syrup

5. 2 cups of water

6. ¼ cups of orange juice


Instructions

1. Scrape the seeds and vanilla bean halves. Combine the sugar, maple syrup, water, and orange juice in a deep medium size saucepan over medium heat. Bring to a simmer, stirring to dissolve the sugar. Reduce heat to low.


2. Add the pears, bring the syrup back to a very gentle simmer. Press a sheet baking paper onto the surface of the pears. Cook, turning occasionally, for 40-45 minutes or until pears are tender. Remove pears and vanilla beans to a tray.

3. Increase heat to high, boil the syrup, uncovered, stirring occasionally, for 20 minutes or until thicken and syrupy.


4. Place the pears on serving plates. Drizzle with syrup and serve with shortbread and whipped cream, to serve with poached pears.


Autumn Apple Chia pudding


Ingredients for pudding

1. 1 cup of unsweetened coconut milk

2. ¾ cup of unsweetened apple sauce

3. Pure vanilla extract 1 tsp.

4. Ground Cinnamon ¼ tsp.

5. Maple Syrup 3 tsp.

6. ½ cup of chia seeds


Ingredients for topping

1. 3 diced medium apples

2. Light brown sugar 1½ tsp.

3. Apple pie powder 1 tsp.

4. Maple syrup 1 tbsp.

5. Himalaya pink salt, just a pinch

6. ¼ of large lemon


Instructions

1. To make a pudding first, add the coconut milk, apple sauce, maple syrup, vanilla and cinnamon. With a hand mixer, mix on medium speed until just incorporated.


2. Mix in the chia seeds and set aside. Blend the pudding a couple of different times over the next 10 minutes. Divide the pudding among 4-6 serves. Allow to sit in the fridge overnight or for at least 4 hours.


3. For topping, heat a skillet over medium heat. Add all the ingredients and stir to combine. Cook the apple mixture until the mixture becomes thick and the apples are crisp-tender, about 5 minutes.


4. Put the pudding to top with apple pie filling, a diced apple, and cinnamon stick. Ready to serve now!


Apple Chips


Ingredients

1. 3 apples

2. Ground cinnamon for flavoring

3. Sugar for flavoring


Instructions

1. Preheat oven to 200°F (or 93°C). Line two large baking sheets with silicone baking mats. Set aside.


2. Wash and thinly slice the apples as shown in the photos above. Spread the apple slices onto the baking pans making 1 single layer. Sprinkle with cinnamon and sugar.


3. Bake for 60 minutes, flip the apples over, and bake for another 60-90 minutes. Turn the oven off and keep the apples inside as the oven cools down for 1 hour. This will help them get crunchy. Store apple chips at room temperature in an airtight container for up to 1 week.


Spiced granola yogurt topped with apple pears jars for breakfast


Ingredients

1. 4 pears

2. 1 cup of pear nectar

3. Ground cinnamon ¼ tsp.

4. 2 cups of Greek yoghurt

5. ¼ cup of honey

6. ¼ cup of light olive oil or coconut oil

7. 3 cups of traditional rolled oats

8. ½ cup of quinoa flakes

9. ¼ cup of oat bran

10. ½ cup of flaked coconut

11. Sesame seeds / 2 tbsp.

12. Trail mix 250 g.


Instructions

1. For the granola, preheat oven to 150°C fan forced. Lightly grease a large, deep roasting pan.


2. Combine honey and oil or coconut oil in a small saucepan. Stir over medium heat until mixture is warm.


3. Combine oats, quinoa, bran, coconut, sesame seeds and trail mix in the roasting pan. Pour over honey mixture, stir until well coated. Spread mixture evenly over base of the pan. Bake for 40 minutes, stirring after 20 minutes, or until golden and toasted. Set aside to cool completely.


4. Peel, core, and quarter two pears into pieces. Place into a saucepan. Pour over the pear nectar. Bring to simmer. Simmer 10 minutes until pears are just tender. Pour into a bowl to cool.


5. Meanwhile, peel and grate remaining two pears. Stir into the yoghurt with cinnamon.


6. To serve, spoon granola into the base of jars or serving bowls. Top with spiced pear yoghurt then poached pears and syrup. Serve with extra milk if desired
